Our award-winning Executive Chef, Chef Joseph McFadden took his culinary expertise to Spain to compete in the 5th annual World Tapas Competition by the City Valladolid, representing the United States during the World Tapas Festival. Chef McFadden competed with a signature dish of his own creation, an innovative duck tapa three-ways consisting of a crispy duck skin cone filled with duck liver and cognac parfait, smoked duck breast, peeking sauce and garnished with cucumber and white scallion. “The idea for the tapa is born from my love of cooking with duck, its versatility and showing three different ways it can be used to complement itself and how the different textures blend seamlessly,” says Chef McFadden.
